To help use up a glut of runner beans
Ingredients
2 lb runner beans
1.5 lb chopped onions
1 lb demerara sugar
1 lb soft brown sugar
1.5 pt vinegar
1 oz cornflour
0.75 oz turmeric
0.75 oz dry mustard
Preparation & Cooking
Top & tail beans & cut into 1 inch lengths. Cook the chopped onions in 0.5 pint of vinegar until soft. Mix the dry ingredients to a smooth paste with the remaining vinegar.
Strain the beans & add to the vinegar. Cook for 10 mins. Add the sugar & onions and simmer until reduced to a thick consistency.
Pot and seal.
